Just Peachy

Peaches provide the perfect quench for a sweetness craving but, sadly, we are nearing the end of peach season for the year....






If you know me, then you know that

I LOVE peaches.

So, here's some fun and healthy ideas for those last few peaches on your kitchen counter.



Peach Popsicles:

• 2 Organic Peaches

• 4 tbsp Organic Coconut Milk

• 4 tbsp Organic Greek Yogurt ( I like Vanilla)

• 2 tbsp Organic Honey


Tools Needed:

Blender

Chef's knife

Cutting board

Popsicle mold


Cut peaches into medium-small slices and add to your blender. Then add the rest of your ingredients to your blender and puree on medium speed until your desired texture is achieved. Now pour into popsicle molds and freeze. Serve with happiness!




Peaches & Cream:

• 2 Organic Peaches

• 1 can of Coconut Cream

• 2 tbsp (or to taste) of Organic Honey or 1 tbsp Organic Maple Syrup

• 1 tsp Vanilla extract


Tools Needed:

Chefs knife

Stand mixer + whisk attachment

Glass or metal mixing bowl (not plastic)

Spoon or spatula

Serving bowl

Can opener

Cutting board



Freeze your mixing bowl for 10-15 minutes before attempting to whip your coconut cream, this helps chill your bowl to ensure extra fluffy cream!

Cut peaches into quarters and set aside in your serving bowl.

Open your coconut cream can and add coconut cream to your now chilled mixing bowl, being careful to leave out the separated "juice."

With your whisk attachment, whip cream for about 2 minutes, then add your honey (or maple syrup) and vanilla extract. Whip for another 1-2 minutes or until light and fluffy.

Add whipped cream to the top of your sliced peaches and serve immediately! Delicious!





Peach Jam:

• 2 Organic peaches

• 1 cup water

• 1 cup Organic cane sugar or Maple syrup


Tools Needed:

Chefs knife

Blender or food processor

Cutting board

Saucepan and lid

Jar


Chop peaches into small pieces and place in your saucepan on medium heat. Add your sugar/syrup and water and cook covered until water starts to bubble and boil.

Reduce heat to low and cook uncovered for about 25 minutes or until chunky.

Take off heat and let cool for a minute or two, then place into blender or food processor.

Process mixture until smooth, resembling a jam like texture.

Pour jam into your jar and make sure its at room temperature and covered before placing into the fridge. Store in fridge and use within 4-6 days.





Peach Ice Cubes:

• 5 Organic peaches, peeled and pitted.

• ⅓ cup water



Tools Needed:

Blender or food processor

Chefs knife

Ice cube mold

Cutting Board


Peel and chop your peaches and place into your blender or food processor, then add water.

Process mixture until completely smooth.

Now pour mixture into your ice cube mold and freeze.

These Peach Cubes are perfect for that last summer night cocktail or to prevent your champagne from being watered down. Enjoy!
